Jiro Ono is a sushi chef and founder of Tokyo’s Sukiyabashi Jiro. The documentary Jiro Dreams of Sushi introduced a wider audience to his exacting approach to preparation and apprenticeship.

Early life

First work

Started working at a local restaurant inn in Shizuoka at seven.

Wartime

Was assigned to factory work as a teenager before returning to cooking after the war.
